Taco cookies! A fun, simple treat to make for Cinco de Mayo or Taco Tuesday! I made these last year and they were a big hit with our girls! Your little ones will enjoy helping to make them as well!

Prep:

Place a handful of coconut flakes in a bowl, add a few drops of green food coloring and a little bit of water (this helps blend the food coloring better). Mix together, but don’t overmix! Keep a few flakes white to look more like lettuce! 

Separate your “Taco” ingredients. This makes it easier for your little ones to help assemble them! 

  • Coconut “lettuce”
  • Red mini M&Ms “tomatoes” 
  • Yellow and orange sprinkle jimmies “cheese”
  • Oreos “taco shell”

Taco assembly:

Separate your Oreo cookie and scrape off the frosting. 

Using a knife, gently saw and press down to remove 1/4 of one of the Oreo cookies.

Place the cut cookie on top of the other cookie and use as a guide to cut 1/4 off of the bottom cookie. 

Flip the Oreos over to show the image (you want to keep the smooth side facing out to make it look more like a taco)! 

Scoop a spoonful of chocolate icing onto the edge of a spoon, and press it onto one of the cookies. 

Press the other cookie against the icing to form your taco. Add lettuce (coconut flakes). 

Add tomatoes (mini M&M’s) and cheese (sprinkles). You can leave them like this or add a squiggle of white icing (sour cream). 

The finished Taco Cookies! These were super easy and fun to make and very tasty too! They were also a huge hit with everyone! Perfect dessert to take to your next Cinco de Mayo celebration!
